Carl Jung was a Swiss psychiatrist and brief colleague of Sigmund Freud who parted ways over a personal dispute over the unconscious mind. Brillat Savarin seems to have a very direct approach in determining the best ways to attain the most flavor with your senses. His writing can be confusing at times but highly acceptable in the terms of his opinion of our sensation of taste.


Savarin has three complete principles laid down to analyze our sensation of taste. He holds for certainty that taste gives rise to sensations of three distinct orders. First is direct sensation, second complete sensation, and third reflex sensation. Direct sensation as Savarin describes it is the first perception arising out of the immediate action of the organs of the mouth, while the substance to be tasted is still at rest on the fore part of the tongue. In other words what we perceive as our first reaction to tasting a piece of food. The complete sensation as Savarin describes it is composed of the first perception and the impression which follows when the food leaves its first position and passes to the back of the mouth, assailing the whole organ with its taste and perfume. Lastly, Savarin describes Reflex sensation as being the judgement passed by the brain upon the impression transmitted to it by the organ. Basically the whole impression of taste for that object.


Savarin used the example of a man eating a peach, and how he goes through all these principles to achieve the end result; delicious! He states that it is not until the man swallows that he is able to pass judgement upon his experience. But, I’ve noticed that when we taste a piece of food today, we place it in our mouth, chew it a bit, and cast judgement before we even swallow. Like “mmm this is good” of simply gross. We do not seem to appreciate the full taste of the foods we eat today. We do not savor our flavors.


In class we discussed the four categories of taste that we get from our tongue. At the tip we have sweetness, then further up on both sides we have acid, then almost overlapping is salty, and finally bitter. Taste is the sense that provides us with the least information. It only allows us to identify and evaluate the concentration of the four taste categories for which taste buds are located on the tongue. Savarin believes that we have these senses but simply do not know how to use them properly. We do not go beyond our initial first taste, unless we are trained to do so.

Savarin has a very good understanding of our sense of taste being directly linked to our sense of smell. “He who eats is conscious of the smell of what he is eating, either at once or upon reflection; and towards unknown food stuffs the nose acts as an advanced sentry, crying, who goes there?” (Savarin, 6). His examples of having a cold and holding your nose are subsequently true, but rarely thought of in dealing with our taste sensations.


One thing that Savarin states that does not fully make sense to me is when he talks about the wine drinker. This may be true for your average wine drinker, but not your average wine taster. Most wine tasters will “swish” the wine around in their mouths and spit it out, yet they can get the true flavor without swallowing. How is this so?


Human sensation in our tongue, lips and nose are twice as sensitive as our hands even though they have a maximum of 00 nerves per square centimeter. It is from that point on that information is provided on the texture, solidity, creaminess, smoothness and roughness. Our tongue works as a guiding tool in deciphering what we should and shouldn’t eat.


Animals on the other hand are limited in their tastes. Some live on vegetables, others only eat flesh, others again feed exclusively upon grain; not one of them has any notion of composite savours (Savarin, 0). Animal’s tongues are a mere muscular function. There sense of taste is by no means greater than ours, but possibly quiet equal in the department of deciphering different types of foods.


The senses are the organs by the use of which man communicates with his surroundings (Savarin, 15). Savarin believes that the number of senses we possess is not fewer than six. He claims that sight, hearing, smell, taste, touch and physical desire make up our entire being. Savarin believes that our senses have evolved over time. At first man used his senses purely as a means to direct what he saw, ate, smelled and loved. It was not appreciated as it is today. The senses are now made to help one another, for the use of the sensitive ego and the individual (Savarin, 16). Each sense has grown in its own part to expand and reach in new directions and for us to use and discover new exciting things. Our senses have aided in the development of science. The most delicate and ingenious achievements of science are due to desire (Savarin, 17).


In today’s society, our senses are still valued as highly as Savarin explained them. We use all of our sense countless times a day, and without them, life because different and new. We need to learn a new way to discover our surroundings, and many people are forced to do this. By all means, there is nothing wrong with this, just simply another way of controlling our environment. Our senses are still present just the way Savarin describes them, but I feel that we do not appreciate their true meanings and messages that they are intended for. We do not allow time to evoke in the complete “sense”. Savarin did, and wrote to allow others the same evolutionary knowledge.


I believe that over time the lack of appreciation of the senses has changed. We no longer look in ourselves for the answers; we look elsewhere to be told. Societies interaction with food I feel has grown over the years. Many do value its presence, and we see more and more tasting events that are devoted to one specific food. Perhaps the mere presence of one type of food allows us more time to analyze it and enjoy its true flavors and characteristics.


When Savarin uses the term “the pleasure occasioned by taste”, he is using it to express another feeling towards one of our senses. The pleasure occasioned by taste is our surroundings in which our food is presented. In a room adorned with pictures, sculptures, mirrors, and flowers, a room balmy with perfumes, filled with soft strains of music, gay with the presence of pretty women, man requires no great effort of the imagination to be convinced that all the sciences have been laid under contribution to enhance and set off the pleasures of taste (Savarin, 1). In the essay “States”, Edward Said is trying to make an argument, and he is also trying to explain to the world a great many things. Yet this essay seems to go deeper than that. I believe Said is on a lifelong quest. Said is searching for who he is and the truth behind his past. He is using this pictorial essay to find such a hidden life. I think the pictures are pieces of a puzzle, and to Said they are pieces of his history. It is a history that has long forgotten him. If he finds enough pieces he will be able to build together a whole image of what it means to be a Palestinian. Since Said was exiled from Palestine, this is his way of recreating what his past would have been like. In doing so, he might be able to construct another life and eventually find purpose, and truly understand who he is as a person, as a Palestinian.


Said explains the rights and ways of life of a Palestinian in the first person point of view. However, he has not personally experienced the hardships of being a Palestinian in the Middle East. The way he expresses what the Palestinians go through indicate to me, that he feels left out. If given the chance he would return to Palestine and relive his life there. Said regrets not growing up in Palestine and not being around the comfort of his own people. Said tells us, “When we cross from Palestine into other territories, even if we find ourselves decently in new places, the old ones loom behind us as tangible and unreal as reproduced memory or absent causes for our present state.” (p.67) On this same page he presents the reader with two people in a new apartment, but they look strangely out of place. The men and women in the photograph “re-express the unattractiveness around them.” This is how Said must feel. He feels out of place, and lost. That is why he takes each photograph and puts himself in those people’s lives. To him, these photographs are the only things left that remember who he is.


If one goes through and truly looks at each photograph, they will begin to see how Said feels. What I mean by this, is put yourself inside one of the photographs and relive the moment. Then take into the account that these are your people and your bloodlines. Then you will begin to realize that there is an immense amount of knowledge present here. To Said, who never witnessed these snapshots first hand, this is his chance at a new life. The life that he never was able to live. This is personally very important for Said, who goes on to say that “The facts of my birth are so distant and strange as to be about someone I’ve heard rather than someone I know.” (p.6) It is the same feeling when someone watches old family movies of themselves when they were young. It gives you a certain sense of pride and joy to remember those distant events that have eluded ones own memory.


Edward Said has lived most of his life in New York, and he has become a part of the city. People who know him say that his love for the city is palpable. (Progressive) He is one of the most prominent spokespersons for the Palestinian cause in the United States. Over the years his identity has been masked with a new American one. A reason why Edward in his essay “States” is so emphatically searching for his heritage is that he fears he is running out of time. Right now he is struggling with Leukemia, and might not ever see the day when Palestinians are known in the world as a worthy people, not just an exiled refugee.

I watched a play called “other peoples shoes,” Drama studio, written


by Danny Braverman and directed by Clair Chapman.

The play was basically about the lives of young people in a secondary school.


The different characters each experienced different problems whether that was


socially, educationally, emotionally, or sexually.


The play basically gave us an insight of what it would be like if we were in the


shoes of these people, who found life a bit of a struggle because they were different


from other people, and were classed as not being “Normal.”


They play showed teenage kids, who suffered in their own ways, a sense of exclusion.


As well as inspiring, the play was fun to watch as they used a variety of styles and


genres. The style was theatre like, which meant the style was very physical,


educational, minimalist and forum as the play, was like a public meeting place for


open discussions.


From the opening scenes, I gathered up the idea that the play was very modern. This


was reflected through the dialogue, the props and background.


The play was mainly kept very contemporary as many of the different problems and


characteristics in the play related to the present, or immediate past of many issues that


occur on today.


The modern style was carried out throughout the play, very effectively as they used


slang, to represent the way in which teenagers carry themselves nowadays.


(i.e. when Melissa said to Sal “Ay, are you a lesbo?”)


The director used thought tracking to go back in time so, the audience can get a taste


of the characters past was like and how they got to be, they way in which they are.


Monologues were used quite a lot so we can have a set focus, on one character, to


know their inner feelings and emotions and why they feel, they way in which they do.


The play was set in East London, a democratic society with a mixed variety of


cultures, creating a multi-cultural society, which meant that some people didn’t fit in,


as they came from a particular background or country. A good example of this


was when Melissa didn’t want to work with Vardaan, because his English was not up


to Melissa’s standards, and Melissa assumed, because of the colour of his skin, he


came from Kosovo, and being a Kosoven was a bad thing to her.


Melissa made him an outcast and this brought down Vardaan’s self-esteem. Melissa’s


bitterness, created an atmosphere of tension and people, tried to keep themselves to


themselves, and not share their inner feelings and emotions, they truly had. (i.e. Sal


kept her true feelings in her diary that only her eyes could see.)


Music was used to reflect the culture of the characters we explored.


They used popular r ‘n’ b music that many teenagers listen to now. They used the


music very effectively as they choose an r ’n’ b singer who sings about the wrong in


gun crime and violence. Miss dynamite is an r ‘n’ b singer, who sings about peace,


someone that people see as a role model, who they can look up to, and follow their


example.


Sal followed Miss Dynamites footsteps and made not a song, but a poem about her


feelings and emotions.


The theme that stuck in my mind which was explored in the play, was the scene


where Melissa, knew that Sal was attracted to a member of the same sex and used this


against Sal to weaken her status as she knew Sal didn’t want anyone to know about


the way she felt, so every time Melissa would walk past Sal, she’ll call her a “lesbo”


Melissa spoke in a manipulative and scheming tone, which just completely lowered


Sal’s status.


This got to Sal, but if I was to play her character, I would not have just put my head


down and walked very fast away from Melissa, but stood my ground and told Melissa,


that there was noting wrong in feeling the way in which Sal felt.


The scene was staged at the back of the stage, which symbolized that Sal was in a


position that was hard to but not impossible to speak her heart out. From the


consequences that occurred later on in the play, where, Sal felt as thought, she had


lost a best friend I learnt that, its better off to share your a thoughts and feeling with


other people, or someone whom you feel close to.


Sal could have even spoken to someone who was in the same situation as her, as she


had a male cousin who was sexually attracted to members of the same sex as he was.


If you kept something to yourself, and not tell someone, you should expect it to in the


end finally come out, but just not in a very pleasant way.


Another scene that was explored in the play was, when Sal was trying to tell


Chantelle, that she loves her, in ways, which is more then, a friend. Sal was obviously


not being bold enough because Chantelle thought Sal was being sweet and she meant


it in a friendly gesture. This scene was set where Chantelle and Sal, were talking,


sitting on chairs based on the front of the stage, and Chantelle said to Sal, that she’s


happy and lucky to have her.


This gave Sal, the opportunity to tell Chantelle about the way she felt, but if I was to


act out Sal, I would have opened out more, and actually told Chantelle that I admired


her, and my feelings for her were deep.


The production made me think that all the characters had something in common, and


if they interacted and communicated with each other, most if not all their problems


would have been solved, as all their problem were similar, because they were all


suffering from exclusion.


The play was mainly set in school and by the setting of the stage I could clearly see


the play was set in a classroom. The way the, layout of the chairs were set out worked


effectively as, when there was a change of scene, one or two chairs would be


removed, and so the audience could clearly see, it was the beginning of a new scene.


No lighting or any special effects were used as it was not necessary, nor was it needed


for any part of the play.


The costumes that were used where realistic and symbolic to modern day, as the


characters wore the popular and most common uniform of black trousers and a white


shirt.


Vardaan, wore like everyone else, black trousers, a white shirt and trainers


The teacher wore, black fitted trousers a white shirt and a scarf, and this made her


look more sophisticated, and communicated to the audience that she had a higher


status then Vardaan and his classmates.


All the actresses and actors performed well but the character that stood out the most


for me, was Sal.


Sal was a very interesting character has, she had so many different personalities. Sal


would be happy, rude, kind, sharing and funny depending on who she was with.


Sal was a very lively individual.


To me I saw Sal as a very confused person, who didn’t have trust for many people,


and so wrote all her true feelings and emotions in her book.


She would put on a brave face, as if putting on a mask of another person who doesn’t


care about what anyone thinks, and just likes to have fun, but really behind that mask,


she’s a lost sheep who needs someone to lead the way for her.


It was hard for Sal to trust someone, and when she finally had trust in her best friend


Chantelle, Chantelle betrayed her.


This was when Sal took the mask off and showed the true Sal.


Sal was a very exciting character to watch, as you never expect exactly what she


would do next.


The play thought me of how bullying and provoking others does not always have to


be shown, by Violence or loud voices. It can be done in soft, arrogant voice the way
